Ultra

Ultra is a project born to highlight the products of the lagoon and the surrounding lands.

It started as a research project in the area, creating a strong network of friendships between farmers, fishermen, and hunters, and then evolved into a series of small-scale dinners where all those ingredients found are worked and served without too many frills.

The goal remains to enhance the intrinsic flavor of the ingredients, removing any embellishments from the dish, and returning to a primitive state where food and fire come together through a Japanese interpretative key.
